Royal Dum Biryani

Royal Dum Biryani

Biryani Masala
Pro TipMarinate vegetables or meat with 2 tsp Biryani Masala and fresh curd for at least 1 hour before layering with parboiled basmati rice.

The marinade is doing the real work here. An hour is the minimum; overnight in the fridge is better. Layer the rice only when it is 70% cooked, seal the pot with dough or foil, and give it 20 minutes on the lowest flame you have.

Street-Style Mumbai Pav Bhaji

Street-Style Mumbai Pav Bhaji

Pav Bhaji Masala
Pro TipSauté 2 tbsp of Pav Bhaji Masala in butter along with mashed boiled potatoes and vegetables for that rich, red colour and street-style kick.

Butter, not oil — that is the whole secret of the Chowpatty version. Bloom the masala in the butter first so the Kashmiri chilli releases its colour, then mash the vegetables directly into it and keep mashing longer than feels necessary.

Chole Masala
Pro TipAdd 2 tsp Chole Masala after roasting the onion-tomato base; simmer boiled chickpeas on low heat for 10 minutes to allow deep flavour absorption.

Do not add the masala early. The onion-tomato base needs to be properly browned first, otherwise the anardana turns bitter. Those last 10 slow minutes are when the chickpeas actually take on colour and flavour.

Restaurant-Style Shahi Paneer

Restaurant-Style Shahi Paneer

Shahi Paneer Masala
Pro TipStir 1–1.5 tsp into a cashew-onion gravy with fresh cream or milk; finish with a pinch of kasuri methi right before serving.

Keep the quantity restrained — shahi means royal, and royal means balance rather than heat. Crush the kasuri methi between your palms as you add it at the very end; that one gesture is the difference between home shahi paneer and the restaurant version.

Classic Dal Tadka

Classic Dal Tadka

Dal Masala
Pro TipStir 1 tsp into a sizzling tadka of ghee, cumin and sliced garlic, then pour directly over boiled arhar/toor dal and cover immediately.

Covering the pot immediately is not optional. The aroma released in those first few seconds is exactly what you are trying to keep, and an uncovered pot loses it to the kitchen instead of the dal.

Instant Snack Seasoning

Instant Snack Seasoning

Magic Masala
Pro TipToss hot french fries, freshly popped popcorn or fried pakoras with 0.5–1 tsp while still warm so the spice clings evenly.

Temperature is the trick. Season while the food is still steaming and the masala sticks to every surface; wait two minutes and most of it ends up at the bottom of the bowl.

General Cooking Tips

When should I add ground masala to a dish?

Blends containing whole roasted spices — garam masala, biryani masala, shahi paneer masala — go in near the end of cooking, so their volatile oils reach the plate rather than the extractor fan. Base spices such as turmeric, coriander and chilli powder go in early, with the onion-tomato masala, because they need heat and fat to lose their raw edge.

How much masala should I use?

As a rule of thumb, 1 to 2 teaspoons per 250g of the main ingredient. Our blends are made without fillers, so they are more concentrated than mass-market masalas — start lower than you would with a supermarket brand and adjust upward.

Why does my masala lose its smell after a few weeks?

Almost always moisture. Never use a wet spoon, never hold the pack over a steaming pan, and close it immediately after use. Store in a cool, dark cupboard — not above the stove, which is where most Indian kitchens keep spices and where heat quietly destroys them.

Can I use these blends in non-Indian cooking?

Frequently, and they work well. Magic Masala is excellent on roast potatoes, grilled corn and popcorn. Chaat Masala lifts fresh fruit, avocado and grilled fish. Garam Masala works in braises and even in some baking.

Are your spices suitable for vegetarians and vegans?

Yes. All Zaiika King spices and blends are 100% vegetarian and contain no animal-derived ingredients. Blends named for meat dishes — Chicken Masala, Meat Masala — are named for their intended use, not their contents.
